Ingredients:
1 butternut squash 2 Tbsp olive oil 2 cloves garlic, minced salt and pepper Directions: Preheat oven to 400 F. Cut the squash in half and scoop out seeds and strings. Peel the squash. Cut into 1" cubes. In a large bowl toss the squash cubes with oil, garlic, salt and pepper. Arrange mixtures on a baking sheet. Roast in the oven until tender and lightly browned, about 30 min.
