Ingredients:
2 Tbsp olive oil 1 Tbsp balsamic vinegar 1 Tbsp dried oregano 1 Tbsp dried basil Salt and pepper 1 cucumber 1½ c cherry tomatoes, quartered 8 oz mozzarella pearl sized balls ½ large red onion, diced Directions: 1)In a small bowl mix together olive oil, balsamic vinegar, dried oregano, dried basil and a dash of salt and pepper; set aside (this is the marinade). 2) Scrape the skin of the cucumber with a fork up and down a few times (or peel it). Slice thin and dice. Add to a medium sized bowl. 3) Quarter washed cherry tomatoes. Add to the bowl with the cucumbers. 4) Thinly slice and dice your red onion (if you do not like onion, feel free to omit from the recipe). Add to bowl with cucumbers and tomatoes. 5) Add mozzarella to the bowl with tomatoes. 6) Pour marinade over vegetables and cheese; mix well. 7) Allow to sit for 10 minutes before serving.
