Pinwheel Sandwiches

Ingredients:
1 large head romaine lettuce                             4 oz whipped cream cheese
1 c baby spinach leaves                                       8 large fresh basil leaves
Salt and pepper                                                       4– 10” flour tortillas
8 oz deli turkey                                                          ½ c roasted peppers, strips
1 c shredded carrots

Directions:
1) Pull the largest four romaine leaves from the outside of the bunch and wash and dry carefully, trying not to tear the leaves. Cut the leaves at the base where they were connected to the root; the pieces should be about 9-inches long. Using a vegetable peeler, shave the center rib so the leaves roll up more easily. Set aside.

2) Combine the cream cheese, spinach and basil in a food processor and puree until smooth. Season with 1/4 teaspoon kosher salt and a few grinds of pepper.

Green Salad with Orange, Avocado, and Red Onion

Ingredients:
2 medium navel oranges                                               1 clove garlic, minced
2 Tbsp red wine vinegar                                                 1 tsp Dijon mustard
Pinch of salt                                                                          ¼ olive oil
½ medium red onion, sliced thin                                   2 medium avocados, sliced
1 head romaine lettuce, washed and chopped

Directions:
1) Segment the oranges over a small bowl. Squeeze any remaining juice from the peels and membranes into the bowl.
2) Strain the orange segments, reserving the juice.  In a small bowl, combine 1 Tbsp of the orange juice with the garlic, vinegar, mustard and salt.  While whisking, pour the oil into the bowl in a thin stream, and continue whisking until all the oil has been added and the dressing is smooth and emulsified. 
3) Combine the lettuce, strained orange segments, onion, and avocado in a large salad bowl. Drizzle the dressing over the salad and toss to combine. Serve immediately

Waldorf Chicken Boats

Ingredients:
Dressing:
½ c low fat Greek yogurt                                       1 Tbsp lemon juice
1 Tbsp olive oil                                                   2 tsp apple cider vinegar
½ tsp chopped fresh thyme                                       salt and pepper

Salad:
¼ c walnuts, chopped                                         
1½ c cooked chicken diced to ½” pieces
1 small, tart apple, cored and chopped
½ c red seedless grapes, halved
3 scallions (green onions), whites & greens divided, chopped
8 romaine heart leaves or 12 Bibb lettuce leaves
 
 Directions:
1) Preheat the oven to 350°F.

2) For the dressing: Whisk together the yogurt, lemon juice, oil, vinegar, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl until combined; set aside.

3) For the salad: Spread the walnuts on a baking sheet, and toast until lightly browned and fragrant, 5 to 7 minutes. Let cool for 5 minutes, then break up into 1/4-inch pieces.

4) To assemble: Toss the walnuts, chicken, apples, grapes and scallion whites together with the dressing in a large bowl until everything is well coated; season with salt and pepper. Scoop a scant 1/2 cup of the salad into each romaine leaf, and arrange 2 on each serving plate. Garnish with the scallion greens, and serve.

Never leave a child unattended in the kitchen. Limit the child to tasks that are safe and age-appropriate.

Chicken Berry Salad

INGREDIENTS
1 (.75 ounce) packet honey mustard salad dressing mix
1/4 cup cider vinegar
1/2 cup vegetable oil
2 tablespoons orange juice
1 pound skinless, boneless chicken breast halves
8 cups mixed salad greens
1 cup sliced fresh strawberries
1/2 cup fresh blueberries
1/2 cup fresh raspberries
8 ounces sugar snap peas
1/2 cup toasted pecans
 
DIRECTIONS
In a medium bowl, prepare the dressing according to package directions, using vinegar and oil, and substituting orange juice for the water, set aside.
 
Preheat the grill for high heat.
 
Lightly oil the grill grate/  Grill the chicken 6 to 8 minutes on each side, or until juices run clear.  Remove from heat, cool, and slice into strips.
 
In a large bowl, toss together the chicken, salad greens, strawberries, blueberries, raspberries, peas, and pecans.  Pour in the prepared dressing, and toss to coat.
