Beet Smoothie

Ingredients:
1 small or 1/2 large, cooked beet
1 c frozen blueberries
1 frozen banana
1 c unsweetened almond milk or milk of choice
2 Tbsp unsweetened cocoa powder
1 heaping Tbsp peanut butter

Directions:
To cook the beet: cut unpeeled beet into quarters.  Place in a steamer basket/small pot and fill with just enough water to reach the bottom of the basket.  Cover and bring the water to a boil.  Reduce the heat to low and simmer 20-25 min. Cool, peel, and store in fridge for up to 5 days. 

Blend all ingredients in blender until smooth.  Enjoy!

Green Smoothie

Ingredients:
1 c spinach                                    ½ c milk of choice
½ orange juice                             1 c frozen mango
1 c frozen banana                      1 Tbsp chia seeds
 
Directions:
1) Tightly pack the spinach in a measuring cup. Be generous!
2) Add the spinach to a high powered blender. Add milk, juice, frozen fruit and seeds. 
3) Blend well until the mixture is creamy and no spinach flecks remain. 
4) Serve immediately.  Enjoy!

Purple Smoothie

Ingredients:
2 c plain or vanilla Greek yogurt                        2 c fresh or frozen blueberries
2 c fresh or frozen mixed berries                       ¼ head of red cabbage
1 whole banana, peeled                                       ¼ c honey
1 c cranberry or grape juice
 
Directions:
Throw all the ingredients in a blender and mix until smooth. Taste and adjust sweetness, creaminess...whatever it needs! Add ice if it needs to be more "frozen."

Fruity Peanut Butter Pitas

Ingredients:
¼ c peanut butter
2 whole wheat pita pocket halves
⅛ tsp ground allspice
⅛ tsp ground cinnamon
⅛ tsp ground nutmeg
½ medium apple, thinly sliced
½ medium, firm banana, sliced
 
Directions:
1) In a small bowl, blend the peanut butter, allspice, cinnamon and nutmeg.
 
2) Spread the peanut butter mixture inside pita bread halves
 
3) Fill with apple and banana slices.

Melon Ginger Smoothie

INGREDIENTS
1 cup chopped honeydew melon
1/3 cup chopped peeled kiwi
1/2 ripe banana, sliced
1/4 cup white grape juice
1/2 teaspoon ginger juice
2 teaspoons lime juice
1/3 cup lemon sorbet
1/2 cup ice
 
DIRECTIONS
Spiked with ginger, this smoothie is guaranteed to perk you up after a long bike ride or make a nice starter to a summer meal on the deck.  For a more aromatic variation, use a cantaloupe instead of a honeydew melon.
Place ingredients in the order listed in a blender.  Pulse three times to chop the fruit, then blend until smooth.  Serve immediately.
