Ingredients:
4 c Brussels Sprouts 2 Tbsp unsalted butter or olive oil 2 Tbsp fresh lemon juice 1 Tbsp fresh lemon zest 2 Tbsp honey 1/4 c roasted, unsalted sunflower seeds 2 Tbsp grated Parmesan cheese Directions: 1) Grate brussels sprouts in a food processor or chop with a knife 2) Warm the butter/oil in a medium skillet over medium heat. Add the sprouts and stir often for about 5-8 min or until softened (add a little water if sticking) 3) Stir in juice, zest and honey. Serve topped with seeds and cheese.
